A simple Spring Salad!

Spring is here!! Spring brings a sense of life.. a sense of hope after a long haul winter and Gray clouds.. Bright blue skies and fresh smelling grass makes me jump with cheer! and of course all this is followed up with a fresh zingy food and what else other than an big fat bowl of salad can fulfill this craving. The salad leaves in spring are fresh and vibrant, you can get all kinds of salad leaves this time of the year. Cherry tomatoes are at their freshest :) if there is a word called freshest! Bottom line all  smells and tastes a lot fresher!
If you also get a salad craving once a while, this is an absolute treat! It has a nice dressing not completely guilt free but hey when you are celebrating spring you are allowed a little bit of luxury :-)

Here is what you need if you want to make some:

  1. 100 gms of mixed leaf salad bag. If you cant find this, pick what ever takes your fancy, I had some gem lettuce, chicory, rocket leaves and watercress.
  2. 2 medium sized cherry or wine tomatoes. Regular tomatoes work just fine, chop them in chunky pieces.
  3. Mini mozzarella cheese balls. Torn up mozzarella will work just fine, or any other soft cheese you like you can add that, just don't put any hard cheese in, it will make the salad more greasy.
for Dressing:

  1. 2 tbl spoons low fat Mayo, full fat will taste even better, but I wanted this to be a little healthy :)
  2. 1 tsp grainy mustard
  3. 1 tsp Dijon Mustard
  4. a healthy pinch of salt
  5. freshly grated pepper as per taste
  6. half a lime
  7. a drizzle of extra virgin olive oil, you can put light olive oil if you don't like strong olive oil.
  8. a pinch of sugar
Put everything together:

  1. Put the salad leaves, tomatoes, Cheese balls in a roomy bowl.
  2. Put the dressing together by mixing, Mayo, Olive Oil, Grainy Mustard, Dijon Mustard, Salt, pepper and a pinch of sugar. Squeeze the half lime or Lemon and beat everything together until it looks nice and creamy.
  3. Pour the dressing over the salad and mix it up well until every leaf and cheese is coated in dressing.
  4. There you have it a sharp fresh zingy salad which can go as a side dish with anything or good by it self with a wadge of bread if you want to be good :)
Tip - Always dress the salad just before you want to eat it, else the salad leaves will go soft. The salads always taste better when they are crispy.
