Any who :) One of my friends loves Okra and asked me the recipe for it.. Okra just tossed with a few spices and oils tastes great but I wanted to make it a little special. My mother and sister are very creative when it comes to veggies, I think I have mentioned this in my other blogs too but they are always my source of inspiration when it comes to Indian cooking :-0) So this is a recipe that my sister gave me to knock up a quick snacky veg tastes great and you dont have to slog stuffing the okra pieces with spices and they still taste like stuffed Okra! How cool is that :) So here we go:
To make this dish you need:
- 250 gms Okra
- 1 tea spoon Corn Flour (besan)
- 1 table spoon crushed peanuts
- a good pinch of chilli powder
- a good pinch of turmeric
- pinch of sugar
- a good pinch of mustard seeds
- If you can easily get your hands on tawa fry masala thats all you need, the one I use in this is MDH, but if you cant no problem, here is what you can use:
- 1/4 tea spoon roasted cumin powder
- 1/4 tea spoon coriander powder
- a pinch of mango powder (optional)
- 1/4 tea spoon garam masala
- Quarter of a lemon
- Oil for cooking
- Cut Okra in big chunks and slit them in the center taking care not to cut them. Else if they are very fresh and small leave them whole with a slit in the center. Make sure the Okra is wash and dried before cutting them, else the Okra will be very slimy and sticky to cook. If this does happen squeeze a little lime / lemon / Kokam / Tamarind when you add the okra this will avoid them going slimy.
- In a nice thick bottom pan pour some oil, about 1/2 table spoon, its a little more than I use but this is what makes the okra crispy.
- Add the mustard seeds once the oil is hot, and stand back these will sputter.
- Once the mustard seeds stop sputtering add the Okra in. Do not add salt at this time as it will make them soggy.
- Leave them for 5 mins till they get nice colour and look crispy
- Meanwhile Mix, Corn Flour, Crushed Peanuts, Chilli Powder, salt, Turmeric, Masala (either tawa masala or the masala you must have prepared by mixing everything), sugar
- Give everything a good mix and then pour some oil and mix it well. Adding oil will not burn this mix when its added to the pan since this dish is quite a dry dish.
- Once the okra is ready, add the Masala mix to the pan and fry it along with okra for about 2-3 mins. Fry this on a very low flame to avoid the masala burning.
- Once everything turns nice and golden squeeze lemon juice to you taste.
- And there you are served !!
Finally the long wait is over and I get to see another recipe! I remember you making this and bringing the dish over for my father who appreciated it very much. You did not hear the praise though as you were not around and only the dish was. Sandeep is likely to remember that occasion.
