Sweet Potato Toffees!!

I know sounds pretty unbelievable, when some one says sweet potatoes toffees! These sweet potatoes I made, I couldn't think about anything but toffees when I had a mouthful :) I had this nice big sweet potato staring at me for days on my window sill. I bought it thinking I will make the classic yam fries, but the idea of deep frying kept putting me off! That's when I thought of making these. All I did was cut the sweet potato in circular discs, sprinkle some salt and sugar to help them caramelise and draw some moisture, to help them soften as they charred. Try and use an iron skillet or a heavy bottom pan, since these need to char nicely, and there is no fat involved. Turn the heat up, place the sweet potatoes in the pan and cover them for a min and cook each side and there you have it, leave the skin on it will give an enhanced taste to the sweet potatoes :)

  1. You bet! In Hyderabad, two popular sweet dishes are Double ka meetha and Meetalu ka meetha. Double ka meetha is also called Shahi Tukde by the sophisticate but double is colloquial for bread there.
