Most of us end up eating beans on toast once a month if not more, so why not make it a tasty affair?? Beans are not as bland as they are perceived to be, in fact they are the most healthy and forgiving thing you can cook with, they absorb all the spices and juices to create a mouth watering bite of food :) I have some days when I haven't had the time to go grocery shopping and my pantry looks really grim! My default resort is cooking beans in some shape of form. I rummaged through my fridge very hard and found a can of cannelloni beans, I always have these stocked up to add to my clear soups. This recipe will work well with any kind of beans I just happened to have the cannelloni beans. Here's what I made this with, substitute it with fresh ingredients if you like but can works really well too!

- 1 Can of cannelloni beans
- Olive oil
- tomato paste or pasata
- 1 red onion
- pinch of cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- a good pinch of turmeric powder (make sure you don't put turmeric too much it can get bitter and over powering)
- 1 large clove of garlic and 1/2 inch ginger
- a pinch of chili powder
- curry leaves (optional)
- Lemon / Lime a healthy squeeze
- Salt and Pepper for seasoning
- Rinse the cannelloni beans thoroughly under cold water.
- Cut the red onion into fine half moons
- Slice the garlic thinly and grate the ginger.
- Add the olive oil enough to to grease the pan you are using, add the curry leaves and cumin seeds. Stand well back because these will sputter.
- Add the garlic and Ginger together and fry for a couple of seconds.
- Add the onion and let is cook until it gets translucent, the idea is to still have some bite to the onion.
- Add the tomato paste (1 tbl spoon)or pasata (2 tbl spoons)
- Add the beans and a cup of water and cook till the water reduces.
- The beans are canned so do not need very long to cook.
- Garnish with your choise of herb.
- We are done and ready to dish up :)
I promise you beans on toast won't be boring ever again!
