I have been experimenting with Omelette recently.. easy, lazy, light, fluffy and pick me up :) Trust me I discovered you can have a pick me up omelette. On a rainy day, all you want to do is drink lots of steaming hot tea or coffee, cuddle up in a warm blanket with a lovely book or a movie you have been wanting to watch for a long time.. while all this sounds desirable, your tummy craves for something nice to compliment the your mood.. If you are all by yourself and have to drag yourself out, my pick me up omelette is just the answer.. simple, healthy.. well not so healthy :) but delicious! So here goes the recipe..
Ingredients
- 2 large eggs
- 1-2 Shallots - depending on the size, if they are miniature shallots use 2, you can alternately use spring onions. Avoid using regular onions, shallots gives a little sweetness and fragrance.
- 1 nice fat chili - If you cannot handle spice, half a chili please!
- freshly copped coriander - to taste
- 1 small red radish (the ones that you can see in the background of the post)
Spices
- a good pinch of coriander powder
- a good pinch of cumin powder
- coarsely grounded pepper small pinch
- a smal pinch of garam masala
- salt to taste
- 1 tablespoon milk
- Cheddar Cheese
- Olive Oil / Salted butter

- 1 tablespoon milk
- Cheddar Cheese
- Olive Oil / Salted butter
Method:
- Finely chop shallots, chili, coriander and radish.
- Break the egg and add milk. Beat the eggs till they turn light yellow in colour.
- Add the finely cuts vegetables, spices and salt and mix well.
- Heat up the pan and turn the heat to low. Add Olive oil or butter depending on, whether you would like to go healthy or guilty :-) If you do go in for butter make sure to add a drop of oil to avoid the butter getting burnt.
- Pour half of the batter and swirl it around in the pan, the idea is to get a nice thin translucent omelette.
- Filp the omelette, once it looks firm and remove it from heat after approximately 30 seconds.
- Repeat the same for the second omelette.
- Grate the cheese over the omelette while serving and enjoy it with nice sourdough bread toasts. The omelette tastes just as delicious even without the cheese.
